Can I be honest with you all? I really wasn’t in the mood for Thanksgiving this year. I haven’t been feeling well and Thanksgiving felt like a burden. But we decided to go ahead and go visit family and enjoy our feast, and you know what? It was wonderful and I’m so glad I didn’t let feeling bad ruin my Thanksgiving!

In fact, as soon as we got home I was instantly excited for Christmas! I couldn’t wait to put up our tree, turn up the Christmas music as loud as it could go, and dive right into all of our beloved holiday traditions; like decorating gingerbread house, visiting the local trail of lights and hosting our annual holiday parties.

From early November until the New Year, I host or help host several holiday gatherings; from Friendsgiving, to our annual White Elephant Holiday Party to a family Christmas brunch. Even though all these events are a lot of work to put together, I really enjoy the planning process, fussing over the décor and creating the perfect menu. And love even more the opportunity to spend time with my friends and family during my favorite time of year.

Since I’ve been hosting these same get togethers for years now and since many of the guests are always the same, many of my friends and family have come to expect certain dishes at our holiday gatherings. And while I also look forward to making these classic dishes each year; I also like to change things up and make new recipes too. Like I always try a new dessert or create a twist on a favorite recipe (like today’s easy quiche recipe)!

But no matter the get together, since several of my friends and family members are vegetarian, I always try to have at least one vegetarian main dish or enough vegetarian sides and appetizers on hand to serve my vegetarian guests (you know, since that’s what a good hostess does!)

And even though we are not a vegetarian household, we do try to eat “meat free” several times a week to add variety to our diet. That’s why I likeMorningStar Farms® Chipotle Black Bean Crumbles™and MorningStar Farms® Grillers® Crumbles™ – not only can I stock up on them while shopping for other groceries and party supplies at my local Walmart; MorningStar Farms® products are convenient and make it easy to transform some of our favorite recipes (like chili, tacos or quiche!) into vegetarian dishes that all of our guests can enjoy without compromising the flavor or protein.

That’s why I decided to change up this year’s Christmas Brunch quiche. I normally make a Sausage and Pepper Quiche that everyone loves, but that doesn’t give my vegetarian family members a filling entrée option. So, this year I’m making this Tex-Mex Quiche, using MorningStar Farms® Grillers® Crumbles, for our holiday brunch. These crumbles could be substituted in any recipe calling for ground beef or sausage, yet have 75% less fat than regular ground beef, and have 9 grams of protein. In my Tex-Mex Quiche recipe, I season the MorningStar Farms® Grillers® Crumbles with taco seasoning to give them a nice spicy flavor; or if your Walmart carries the MorningStar Farms® Chipotle Black Bean Crumbles™, those would work just as well in this recipe.

I’ve tested this Tex-Mex Quiche a few times now and both vegetarians and meat eaters alike LOVE it! It is packed with bold flavors and would be a wonderful addition to any holiday brunch; and to be honest, I think it will become a year-round breakfast staple.

Helpful Tips and Information:

Serving Suggestion: If serving this Tex-Mex Quiche as part of a holiday brunch, I suggest serving it with this Pear and Pomegranate Salad with MapleVinaigrette, this FreshBroccoliSalad(omit the bacon for a vegetarian meal), fresh fruit and vegetable platters and/or yogurt cups.

Entertaining Tip: Sometimes for parties I make my quiches mini by making them in muffin tins. This makes them easy to serve (especially for parties where guests will be busy socializing), as guests can just grab them from a serving platter on a buffet table. Not only that, mini foods are cute and make people think you did all this extra work when really you didn’t!

Ingredients

  • 1 store bought or homemade 9-inch pie crust
  • 1 cup frozen MorningStar Farms® Grillers® Crumbles™*
  • 3 tablespoons water
  • 2 teaspoons taco seasoning
  • 2 tablespoons unsalted butter
  • ½ large red bell pepper, seeded and diced
  • 1 medium yellow onion, diced
  • 1 large jalapeno pepper, seeded and diced
  • 2-3 cloves garlic, minced
  • 4 large eggs
  • 1 cup milk
  • 1/3 cup plain Greek yogurt
  • 1 cup grated cheddar cheese
  • 1/4 teaspoon each kosher salt and black pepper
  • --
  • For serving:
  • 1 Roma tomato, diced
  • 1 avocado pitted, peeled and diced

Instructions

  1. Preheatoven to 375 degrees F. Spray a 9-inch pie plate or tart pan withnonstick spray.

  2. Rollout the pie crust and press into pie plate. Trim away anyexcess dough and flute or crimp the edges of the crust. Set aside.

  3. Heat a large non-stick skillet over medium-high heat. Add thefrozen MorningStar Farms® Grillers® Crumbles™, water and taco seasoning. Cook, stirring occasionally, until the crumbles are heated through, about 5-7minutes. Using a spoon, transfer the cooked crumbles to a paper bowl and set aside.

  4. Return the skillet to medium high heat and add the butter. Addonions and cook until they are traslucent, approximately 7-8minutes. Add the bell pepper and jalapeno and cook, stirring occasionally for anadditional 3-4 minutes. Add garlic and cook for 1-2 minutes and then remove from heat to let cool slightly.

  5. Meanwhile,in a large bowl, whisk together eggs, milk and Greek yogurt; whiskinguntil well combined. Stir in cooked MorningStar Farms® Grillers® Crumbles™, sautéed vegetables, cheese, salt and black pepper.

  6. Pour egg mixture into theprepared pie crust. Bakein preheated 375 degree F oven for 45-50 minutes or until crust isgolden brown and filling is set. Allow quiche to cool in pie plate for 10-15 minutes before slicing. Serve warm, at room temperature orcold garnished with diced tomatoes and avocado, if desired.

  7. ForMini Quiches:Preheat oven to 375 degrees F. Spray a 12-cup muffin tin with cooking spray. Unroll 2 (9-inch) pie crusts and place flat on acutting board. Using a 3 to 4-inch round biscuit or cookie cutter (or a drinking glass)cut approximately 6 rounds from each 9-inch crust. Press 1 (3-inch round) pie crustinto the bottom and up the sides of each muffin cup.

  8. Continue withrecipe as directed above to make quiche filling. Once egg mixture is made, pour approximately ¼ cup quiche mixture intocrusts in muffin tin, filling to within ¼-inch from the top. Bake in preheated 375-degree oven for 25 to 30 minutes or until golden brown and set. Coolin muffin tin for 2-3 minutes, then using the tip of knife, liftquiches from pan.

  9. For “Crustless” Quiches: Alternately, you can omit the pie crust and createmini “crust-less” quiches. Prepare as directed above and reducebaking time by 5-10 minutes.
