I’m a big fan of my blender, especially in the summer. I love throwing a bunch of stuff in and blending it together to make a cool hot-weather treat. There’s no heat from the oven and very little prep because the blender does all of the heavy labor. A press of the button and you’re done!
I confess that this blender recipe didn’t start as a smoothie. I was working on an idea I had for a low-carb, dairy-free popsicle. The problem is, that I made it when I was hungry. Before I poured it into the mold, I poured a bit into a glass, just to taste it. I loved it. It was rich, and creamy, and chocolatey, with just a hint of coffee flavor. I couldn’t stop at a little. Nope, I ended up “tasting” half the recipe.
I did manage to sacrifice a bit of the recipe to make a few popsicles, and they were good. For some reason, however, the recipe just wasn’t quite as good as popsicles, so it became a smoothie recipe. In fact, it became one of my favorite smoothie recipes and is a go-to recipe when I need a quick, nutritious breakfast that will satisfy me for hours.

Ingredients
- 1/2 cup coconut milk (the thick stuff from a can)
- 1 1/2 cup unsweetened almond milk
- 1 teaspoon vanilla extract
- 3 tablespoons granulated stevia/erythritol blend
- 2 teaspoons instant coffee crystals regular of decaffeinated
- 3 tablespoons unsweetened cocoa powder
- 1 avocado cut in half with pit removed
Instructions
Place coconut milk, almond milk, vanilla extract, sweetener, coffee crystals, and cocoa powder into a blender. Blend until smooth.
Scoop the avocado into the mixture. Blend until smooth. Pour into glasses and serve.

You could substitute a little more coconut milk or almond milk for the avocado. Greek yogurt would also work. I would think you would want to use about 3/4 cup of whatever option you choose.

Does it have to be instant coffee? Or can it be ground coffee beans?

Ground coffee beans won’t dissolve like instant coffee does and would make the smoothie gritty. A shot of espresso would probably do the trick, though!

Hi Julie,
I’m trying to remember if I’ve done this before. I think I may have and don’t think it was a problem. You’ll want to keep it in a covered container overnight in the fridge.

you can freeze in a silicon ice cube tray any leftover and then pop them back in the blender with a tad more almond milk

Sure! You can use whatever milk you want. It might decrease the creaminess, depending on your choice. Enjoy!

The avocado I use for this smoothie weighs about 6 ounces before peeling and removing the seed.

I don’t see why not. You may want to taste it and add more if you need to. You also may need to decrease the amount of sweetener if your protein powder is sweetened.
